Pumpkin Bread Recipe

This recipe is actually my sister, Tina's. It is soooo good. We eat it for dessert, snack and breakfast.

5 eggs
1-1/4 c. vegetable oil
1 (15oz.) can solid pack pumpkin
2 c. all purpose flour
2 c. sugar
2 (3oz.) pkgs. cook and serve vanilla pudding mix
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt

In a mixing bowl, beat the eggs. Add oil and pumpkin; beat until smooth. In a seperate bowl combine remaining ingredients. Gradually beat into pumpkin mixture. Pour batter into 2 greased 8 x 4 x 2-inch loaf pans. Bake at 325 degrees for 75-80 minutes or until a toothpick inserted comes out clean. Cool on wire racks.
